Pascal Nessens: , I want to make a statement in my books: Too much tasty food should not have negative consequences for your body. For many people, it seems that healthy food can also be tasty and plentiful, but it is a persistent misconception that you have to miss out on something because of it. The opposite is true! The title of the book I like to eat a lot Made for me: Good food can make me very happy. Many people immediately think of vegetables when they think of a healthy food. Vegetables certainly aren’t bad, but they aren’t necessarily the healthiest choice

Pascal Nessence

“Many people immediately think of vegetables when they think of healthy food. Vegetables sure aren’t bad, you can be creative with them and give volume and color to your plate,” says Nessens. But it is not necessarily the healthiest option. There is a lot of debate about healthy eating, but there is now consensus about its core. This means that healthy food is not refined. Food that has not been tampered with. We sometimes think we can improve nutrition by manipulating it, but this is a real fallacy. These “real” products are very high in calories, but they are also very nutritious for this reason. Think full-fat yogurt, nuts, and fatty fish. They really saturate your body, which makes it hard to overeat.”

Failed attempts

“If you want to lose weight, you have to eat less fat and more vegetables, according to the traditional trend. The result is rabbit food, which is nothing tasty. You are not satisfied and you become angry, so you will not maintain such a diet for long. I I speak from experience. When I turned 19, I fell into the trap of a carbohydrate-rich diet.I ate too much one day to start a diet the next. The result was a yo-yo effect that made me very unhappy.I sought help from nutritionists, But they all adhered to the classic opinion, until my attempts again and again failed. ”

Then I turned to the psychologists, because I thought a lack of willpower must be my problem. Nothing helped me, on the contrary, I began to feel worse. I thought I was on my own, but didn’t realize that the power supply itself was the problem. I became completely fascinated by my eating habits, until I realized that they were no longer normal. This was not the way a person should care about food. Then I started reading a lot and found a series of very interesting scientists, such as Professor William Kurtfriendt, Professor Dariush Mozaffarian of Tufts University, Professors David Ludwig and Walter Willett of Harvard University and Dutch Professors Frits Mosket and Hanno Beagle.”

“These researchers had a completely different viewpoint, and what they said in theory exactly matched what I experienced in practice. I gradually began to change my eating habits. The moment I accepted that I was addicted to carbohydrates, it was easier to open up to solutions. Obviously, these were the A process, and it’s different for everyone. I’m not saying you shouldn’t go off track, but it is definitely possible to eliminate carbohydrates from your system.”

If you keep fats in your diet but avoid sugar, your cravings for sweets will automatically disappear over time. You will notice that you will eventually lose weight without having to count calories

Fat is your friend

“There are two ways to make food taste. Either you add sugar or you use fat. The classic vision wants to avoid fat, but that way you take the flavor off the food. To compensate, they then add sugar, so you soon get a lot of fast carbs. Plus, no Your body is saturated, because all nutrients, and fats have been removed. On the other hand, if you keep fats in the diet, but avoid sugar, your craving for sweets will automatically disappear over time. You will notice that you will eventually lose weight without counting calories. Fats are guaranteed to satisfy you most. Faster and therefore you will eat less.”
