But it is not necessarily the healthiest option. There is a lot of debate about healthy eating, but there is now consensus about its core. This means that healthy food is not refined. Food that has not been tampered with. We sometimes think we can improve nutrition by manipulating it, but this is a real fallacy. These “real” products are very high in calories, but they are also very nutritious for this reason. Think full-fat yogurt, nuts, and fatty fish. They really saturate your body, which makes it hard to overeat.”

Spinach and cheese biscuits
Required for a dozen pieces:
• 130g spinach (organic)
• 70g grated Bruges cheese (ripe)
• 50 gm grated parmesan cheese
• 50 g of almond flour
• 1 no
• Preheat the oven to 180°C.
• Put the spinach in a frying pan with a little olive oil, pepper and salt. Let it shrink. Mix the cooled spinach with the rest of the ingredients.
• Form balls between the palms of your hands, flatten them from the top and bottom to form a cylinder and place them on a baking tray lined with baking paper. Arrange them far enough away from each other that they will melt during the baking process. Bake in a preheated oven for 10 minutes or until they turn brown.
• Leave to cool slightly and serve.
